BBQ Salad

We are not RVers just yet. Our plans are to sell the house soon and travel full time. We found this dish while eating at a local restaurant on vacation in Hot Springs Arkansas and tried it when we got home. It is quick, easy, and tasteful.

Ingredients

 Chopped BBQ or pulled pork
 Fritos corn chips
 Lettuce, shredded or chopped
 Grated cheese
 Ranch style beans, if desired
 French style salad dressing

Directions

This is easy to prepare one individual serving at a time. In a bowl add a layer of corn chips that have been crushed into smaller pieces. Add in layers the meat, cheese, beans, lettuce, and top with the salad dressing. This is great for a quick lunch or dinner the next day after that barbeque.

Serves: 1 or more depending on how much leftovers you have
